As I’m feeling a little under the weather these days, I’ve decided to share one soup that I really like and that makes me feel better during those cold winter days and sick days that my mother often makes. I’ve never been a soup lover until this winter season when I really started to feel the winter bites. I keep telling myself it must have been all that snow and ice I experienced in the past three years in Canada! 😉
Anyways, back to the soup, here is the recipe to make this delicious and hearty black bean soup.
Visto che non mi sento molto bene questi giorni, causa influenza, ho deciso di condividere una minestra che mia madre fa spesso, che a me piace tanto e che mi fa sentire meglio durante quei freddi giorni d’inverno. Non sono mai stata un’amante delle minestre, ma questa stagione invernale mi ha fatto cambiare idea visto che ho cominciato a patire il freddo per qualche ragione. Continuo a ripetermi che devono essere stati tutta quella neve e quel ghiaccio con cui ho avuto a che fare in Canada durante gli ultime tre anni! 😉
Comunque, tornando alla minestra, qui potete trovare la ricetta per questa deliziosa minestra di fagioli neri.
Ingredients:
1 cup dried black beans (soak beans for 8-10 hours in water)
2 tablespoons olive oil
1 onion diced
2 stalks celery diced
3 carrots diced
1 cup tomato puree
1 teaspoon oregano
a dash of thyme
1 teaspoon basil
1/2 teaspoon salt
4 cups of water
hot pepper flakes
Directions:
In a large pot add all the above ingredients, stirring to combine. Cook on medium heat to boil then lower heat and simmer partly covered for approximately 1- 1 1/2 hours or until the beans are tender. Serve immediately.
