Halloween just passed by, but the holiday season is in full swing or at least that’s how it feels for me, especially here in Toronto!
I have always been a Christmas lover, my mother brought me up with the idea that a house should be decorated with lights, many christmas’ trees and a bunch of snowmen and Santa Clauses ornaments.
I was brought up with the North American concept of how Christmas should be celebrated and this made me always feel a little more special and in some cases different from my other Italian friends and family members. Their houses, if they were lucky, would have a small Christmas tree with a few lights on scattered here and there, and I remember thinking to myself: “Why don’t you have all the decorations I have in my home?” Obviously I never told them that, but from the look of delight and amusement I could see on their faces when they entered my home, I knew they were thinking exactly the same thing.
There was also another thing that made me stand out from my classmates and made me become the hero of the holiday season during Christmas time and that thing is my mother baking skills. She is a wonderful baker and cook, you might know her as An Italian in My Kitchen and when she gets into her Christmas cookies baking spirit there’s no going back!
I’ve always had a sweet tooth, I blame her for that! and for this specific post I’ve decided to share a holiday cookie recipe that’s been in our own family tradition to make every Christmas. Now that I’m not able to spend this Christmas with my family (I really hope that things will be different next year) I have decided to keep up the tradition and share these cookies with my family and friends here in Toronto.

Easy Simple Sugar Cookies
Ingredients
- 1 cup butter
- 1 1/4 cups sugar
- 1 egg
- 2 teaspoons vanilla
- 3 cups flour
- 1 teaspoon salt
- 1 teaspoon baking powder
Instructions

In a large bowl cream together butter and sugar until fluffy. Then beat in eggs and vanilla.

In a medium bowl whisk together flour, salt and baking powder. Add to the creamed mixture and combine with a wooden spoon.

Move to a lightly floured flat surface and shape into a ball. Wrap in plastic wrap ad refrigerate for 20 minutes.

Remove from fridge and on a lightly floured surface roll dough (1/3 at a time to make it easier) out to 1/8 inch or a little thicker and cut with floured cookie cutters. Place on parchment paper lined baking sheets and bake in 350° pre-heated oven for approximately 10 minutes or until lightly browned. Let cool on wire racks.
