This year more than ever I am feeling the absence of my family, especially now that the Holiday season is here. But luckily I talk to them very often and we keep in touch thanks to Skype and Facebook.
So this year since I’m not able to spend my Christmas with my family, I’ve decided to bring some of our traditions and our favourite baking goods back to life thanks to my grandmother’s recipes. I am going on a baking spree this Christmas and I’m taking the recipes from my mother’s blog: An Italian in my Kitchen! You should definitely follow her if you want to make some amazing food!
The first cookie recipe I made was this delicious Shortbread cookie recipe.
Christmas Cookies: Shortbread
Prior to making these I was a little bit worried of how they would turn out. My mom gave me a recipe a few weeks ago of some different cookies she wanted me to try making and those didn’t turn out at all. They were a complete disaster! So when I started making these, I panicked as soon as I saw that the dough looked crumbly and didn’t seem to want to stick together, but I remember my mother telling me to keep kneading. “Knead the dough as much as you can.”
So that’s exactly what I did and after about 10 minuted of working the dough I used the cookie cutters to form the shapes of the cookies and voilà, the perfect, most delicious shortbread cookies were created!
I’m proud of the way they turned out and I can’t wait to make more and to share them with all the people that I love here in Canada.
