For today’s healthy bites post I’ve decided to share with you a healthy and great breakfast treat: Light Yogurt Muffins. Since the holidays are now wrapping up and we’re all trying to go back to our normal daily routine, if you’re just a little like me, then you’ll have obviously started planning your post-festivities diet schedule.
These muffins are a great way of starting your day by eating something good that you know won’t hurt your waistline. I used nonfat yogurt and some lemon rind. If you want to just give them a taste you could also make mini muffins, which are also perfect for your Sunday brunch! Enjoy!

Per il post di oggi ho deciso di condividere con voi uno speciale dolce per la colazione: soffici muffin allo yogurt. Visto che le vacanze sono ormai arrivate alla fine e ci stiamo tutti preparando a riprendere il nostro normale ritmo quotidiano, se siete almeno un po’ come me, allora avrete sicuramente iniziato a pianificare il vostro orario post-feste. Questi muffin sono un’ottimo modo per iniziare la giornata con qualcosa di buono che non vi fara’ male al girovita. Ho usato yogurt magro e una scorza di limone grattuggiata. Se volete semplicemente assaggiarli potete anche fare dei mini muffin, che sono anche perfetti per il brunch domenicale! Buon appetito!
Ingredients:
1 1/2 cups of flour
1 cup potato starch
1 cup of sugar
3/4 cup nonfat yogurt
3 eggs
3 tablespoons olive oil
1 tablespoon baking powder
1/4 teaspoon baking soda
grated lemon rind
salt
Directions:
Preheat oven at 350 F. In a large bowl beat the eggs, sugar, a pinch of salt and grated lemon rind. Add potato starch, yogurt and oil mixing with a wooden spoon. Sift the flour, baking powder and baking soda and mix it all together in the bowl. Spoon the mixture into prepared muffin tins and bake for approximately 20 minutes.
