Since I’m a girl who likes to try out new and different things, I’ve decided try the vegetarian life for a little while, until November 30th to be precise, and after that I’ll see how I feel and if I want to continue. I like to call myself a healthy eater, so the recipe I’m sharing with you guys today is pretty easy, quick and super healthy! It’s completely vegetarian and great if you feel like having a light lunch or in need of a detox, especially before the beginning of the holiday season and after, which are the critical times for upset-but-full-of-yummy-foods-tummies.
The recipe is called Baked Mixed Vegetables. First of all turn on the oven and set it at 400 degrees (200 Celsius.) Now, all you need to do is cut up some vegetables, the pieces need to be quite large. Choose whatever vegetables you like, for example I used broccoli, zucchini, carrots, eggplant, peppers, tomatoes and onions, but when I used to live in Canada we often cut up squash, beets, potatoes and cauliflower as well.
I like to season it with some dried oregano and basil leaves, hot pepper flakes (if you like it spicy) some salt and finish the mixture by sprinkling some olive oil. At this point mix all the veggies together so you can spread the spices on all the veggies and not only the ones on top.
As soon as you’ve done this, put the vegetables on a lightly oiled pizza pan and pop it in the oven for about 45 min. to an hour or until the vegetables are tender. When they’re ready take the pan out of the oven and here you have some delicious looking vegetables!
