Veggie Taquitos

This was my first time having a Taquito (it means “small taco in Spanish) and I must say it was freakishly good! It’s a light and healthy lunch idea for when you don’t have much time on your hands to cook. It takes around 45 min and the results are seriously worth it! My mom and I decided to try making Taquitos for the first time today, since we know that the whole family loves Mexican food, especially my sister who, at least once a month, asks my mom to prepare her an-all-Mexican-dinner.

We usually add some chicken or beef to our tacos, but once in a while I do like to keep it light and simple by making our Taquitos vegetarian.

After taking a first bite, I decided that this Taquito recipe would be my new favourite Mexican treat. So let’s cut down the blabbing, here’s the recipe you can follow! Let me know if you tried it and what you thought of it! I love reading your comments. 🙂

Ps: If you like spicy things, try adding some hot pepper flakes to the mixture of this Taquito. It’s even better!

Recipe: 

8 Tortillas

2 tbsp olive oil

2 peppers, diced

1 onion, diced

1 cup mushrooms, chopped

1 cup black beans

1-1/2 cups grated cheese (your choice)

Directions:

Preheat oven to 400. In a medium frying pan add olive oil and saute peppers and onion for about  15 minutes. Add mushrooms and continue cooking for 15 minutes or until tender, then toss with black beans.

On a flat surface place one tortilla at a time. Fill with two tablespoons of veggie mixture and top with shredded cheese.

Roll the tortillas and place them on parchment paper lined pizza pan,lightly brush with olive oil and bake for 15-20 minutes in the oven.

    I wish I could eat tortillas but they aren’t gluten free. Celiac disease is keeping me careful when it comes to eating.

I always wondered what my 30s would look like. Whe I always wondered what my 30s would look like.
When I was younger I thought I’d have my whole life sorted out by the age of 30 and now that I’m here I know that that’s not true. 

Can you ever have your whole life sorted out? 

Change is the only constant.

I make plans daily and I change plans daily, but somehow that doesn’t bother me anymore like it used to. 

I’m excited to enter this new chapter of my life and I’m so happy to be surrounded by the people I love and love me back. Even if we don’t see each other often whenever we do it’s like no time has passed.
