Let’s start this week with a new healthy bites recipe: Baked sweet potato fries.
Before going to Canada I had never seen a potato that wasn’t the typical white potato, so you can only imagine my surprise and curiosity when I saw orange potatoes! When they told me that those were sweet potatoes I decided to try them and from then on I never looked back. I left the white potatoes for the orange ones. Sweet potatoes are not only better for us than regular potatoes, they’re also tastier.
When I came back to Italy, in August, I had to leave behind some of the things I had gotten used to eating and drinking. No more Starbucks coffee, nor Tim Hortons for that matter, no more tortilla spinach wraps (I became a super fan of tortillas because they’re a great fast lunch to pack) and no more brunch dates with my friends during weekends. I even thought I had to say goodbye to my avocados, sweet potatoes and quinoa, but to my surprise I found out that here in Italy you can actually find these products! Although, not as easily as in Toronto.
So here I am, happily sharing one of my favourite ways of eating sweet potatoes in a healthy way. So let’s begin!
Ingredients:
1-2 Sweet potatoes
1 teaspoon oregano
2-3 tablespoons olive oil
2 sprigs of rosemary (leaves only)
Salt (as much as you like)
Directions:
Preheat oven to 400 degrees.
Clean and cut the sweet potatoes into wedges. In a large bowl add sweet potatoes, oregano, olive oil, rosemary and salt. Toss to combine and place on a large cooking sheet. Finish the process by baking for 20 minutes. If you like them brown and crispy broil for two to three minutes.
Remove from the oven and enjoy your baked sweet potato fries!
