Lately I’ve been drinking lactose free milk. I love milk, but I noticed that whenever I drink it I get a lot of small little bumps on my forehead.
This is when I decided to try lactose free milk and guess what? I don’t have any bumps anymore!
Lactose Free Vanilla Cupcakes
I wanted to make some Halloween cupcakes and since I’ve never made cupcakes with lactose free milk, I decided to give it a try and so here they are!
I added the recipe to the bottom of the post. I hope you enjoy them as much as I did!
Lactose-Free Vanilla Cupcakes
Lactose-free Vanilla cupcakes with a green buttermilk frosting perfect for Halloween
Ingredients
Vanilla Cupcakes
- 2 1/2 cups All purpose flour
- 2 cups sugar
- 3 tsp baking powder
- pinch salt
- 1 cup lactose free milk
- 150 g salted butter
- 1 tbsp vanilla extract
- 2 large eggs
- 1 cup water
Frosting
- 3 cups powdered sugar
- 1 cup butter
- 2-3 tsp vanilla
- 1-2 tbsp heavy cream
Instructions

Preheat oven to 350 F (176C) and prepare a cupcake pan with liners.
Melt the butter in a pan and set aside.
Add flour, sugar, baking powder and salt in a large bowl and combine.
In a medium bowl add milk, butter, vanilla extract and eggs and combine.
Add the wet ingredients to the dry ingredients and mix until combined. Add the water slowly on low speed until combined.
Fill the cupcake liners and bake for 15-17 minutes.
Remove the cupcakes from the oven and leave them to cool.
Frosting

Add butter and vanilla in a medium bowl and mix together until combined.
Add powdered sugar and beat on low until combined then mix on medium-high speed.
Add the whipping cream a bit at a time.
